Vegetables for breakfast. It sounds simple enough. But it sounds a little weird too, right? I mean, we live in a culture where marshmallows and candy (disguised as whole grain cereal) and cold pizza are common breakfast “foods.” Bagels, muffins, Danishes, and donuts are typical too. But think about it – there is not a speck of nutrition in any of those foods. The whole grains that might have once been in cereal are so far gone that what remains is a flour that rapidly metabolizes to glucose in your bloodstream. Whatever vitamins and minerals are listed on the label were added back in as synthetic supplements after the grain was processed down to a flour devoid of nutritional benefit.

So does VFB.
You can still have grains and starches in the morning too, but make them health promoting options like rolled oats, steel cut oats, or rice and beans. And have them after a giant portion of veggies, not before. Let your taste buds enjoy vegetables when you’re truly hungry in the morning and they actually taste so much better!

That drizzle of coconut balsamic will do it for me. I’m in on this one. With diabetes, breakfast can be a challenge but VFB is appealing. Thanks for another great idea.
